The reason why I came up with this recipe this time is because I want to eat nutritious ramen without hesitation and want to reduce the amount of leftover food. am.
I tried to make ramen with the theme of "drink soup and be healthy".

② Take vitamins, minerals, and dietary fiber to prepare the body



Take a savory soup that aids digestion and absorption

①Boiled vegetables reduce the amount, so you can take a lot at once
(2) You can take in the whole body without missing dissolved nutrients
(3) Umami ingredients (amino acids) contained in dashi soup can increase appetite and support digestion and absorption



Ingredients

Konbu 5g
Dried shiitake mushroom 5g
Mineral water 1000cc
Chicken wings 700g
One carrot
1 potato
One onion
5 cloves of garlic

Kaeshi
Light soy sauce 25cc
Dark soy sauce 25cc
Mirin 15cc
Sugar          5g




How to make

①Place chicken wings in a dashi bag in a soup containing kombu dashi.  
②Boil the chicken wings in a pressure cooker for 2 hours
③ After 2 hours, take out the chicken wings and add carrots, potatoes, onions, garlic in the dashi strainer pack.
④ Simmer in a pressure cooker for 1 hour.  



During this time, take out the meat part of the chicken wings that you just took out.  
⑥ After 1 hour, put the vegetables in the pack and the meat part of the chicken wings into the soup.  
⑦ Mix and crush the vegetables and chicken wings with a blender until they are no longer in shape.  
(8) 75cc of light soy sauce, 75cc of dark soy sauce, 15cc of mirin, 5g of sugar Add
and simmer for a few minutes over low heat to complete the soup.

Depending on the type of soup and what ingredients are used, the calorie and nutritional content The characteristic of ramen is that it changes greatly, In other words, we found that health risks can be changed depending on the ingredients.

I thought cooking would be difficult. Thinking about the ingredients and people who made the dishes,

The taste was delicious! It feels like ramen that "eats" the soup, like tsukemen.
Considering the nutritional aspect, I added potatoes to the vegetables, but I was worried about the rough texture...
The carrots are also sweet, so it tastes like Western food.
I thought it might be a good idea to stop using potatoes and add ginger to add spiciness and a warming effect.
There are still many improvements to be made to our recipes...
Personally, by mixing and crushing vegetables with a blender, I reduce leftover food,
I think it was good that the nutritional value was increased with the soup.
In order to make the soup a little more smooth, it seems good to spread it with soy milk to remove soybeans.
Last advice. The soup will evaporate when simmering, so it's better to make a lot of dashi.
